Healthy and gluten-free recipes

With the arrival of summer and of course with it the high temperatures, it is very normal that we want to eat something light and fresh , without forgetting that they must be healthy food, that they provide us the necessary nutrients for our good nutrition.

Next we will give you some ideas that besides being tasty, they are healthy, economical and very easy to prepare.

Croquettes of ham and mushrooms

Croquettes are delicious at any time of the year, whether summer or winter, they are always welcome.


  • 100 grams of Iberian ham cut into cubes
  • 50 grams of chopped mushrooms
  • 40 grams of unsalted butter
  • 60 grams of corn flour
  • 30 grams of grated parmesan
  • 500 ml. milk
  • 2 tablespoons of
  • 2 beaten eggs
  • 4 slices of bread to grate
  • Half a tablespoon of grated
  • Ground
  • Vegetable oil for frying


In a pan heat the butter and oil to medium heat , sauté the mushrooms until they are golden, then add the ham and sauté just a few minutes , remove from the heat and add the corn flour; continue cooking, stirring constantly , add the milk little by little, and continue mixing without letting lumps form , until the mixture thickens. Add nutmeg and pepper, stirring constantly, cook until firm. After this it is removed from the fire and placed in another container to cool , then covered with plastic wrap and taken to the refrigerator for two hours.
In a bowl beat the two eggs, in another place the breadcrumbs and the cheese, with the floury hands we take portions of the previous mixture and rest and we form the croquettes of the desired size , we pass them through the beaten egg and then through the bread crumbled with the cheese and fry until brown on both sides; then we remove them on an absorbent paper to remove the excess oil.

If you are a big fan of fish, surely this recipe will be delicious, as well as healthy it is very easy to prepare. It is accompanied by tartar sauce and slices of lemon.


  • 500 grams of potatoes cut into cubes
  • 450 grams of salmon fillet
  • 570 ml. milk
  • 150 grams of breadcrumbs
  • 30 grams of butter
  • 1 beaten egg
  • 1 tablespoon ground onion
  • 1 bay leaf
  • 1 small onion cut into slices
  • Lemon zest
  • Ground black pepper
  • 4 tablespoons of sunflower oil

Tartar sauce

  • 4 tablespoons mayonnaise
  • 1 tablespoon chopped capers
  • 1 tablespoon chopped pickle
  • 1 tablespoon chopped parsley
  • 1 small onion cut into slices
  • Lemon juice
  • Salt and ground black pepper


Boil the potatoes for 20 minutes, let them cool and puree adding two tablespoons of milk and two of butter.
In a pan place the salmon along with the milk, the onion, the pepper and the bay leaf; boil for 10 minutes, remove and crush. Add it to the puree with the onion, the lemon zest and the egg. With the dry hands take portions and form cakes that are not very thick, coat them in the bread crumbs and fry them in the hot oil.

For the tartar sauce, all the ingredients are mixed and a little salt is added.
You can serve the cakes accompanied by this sauce and some slices of lemon.
